These Bircher Muesli Jars are really everything you need at breakfast time: fast, simple and healthy. For a little bit of effort on a Sunday night you will have breakfast prepped for the week.

The options are limitless and you can really adapt this recipe to include the ingredients you love. I love making this when I have lots of left over nuts and fruit; it’s a great way to clean out the pantry!

Ingredients
  1. 2 cups rolled oats
  2. 2 teaspoons cinnamon
  3. ½ cup of a combination of your favourite seeds, nuts or dried fruit
  4. 1 cup Greek yoghurt
  5. 1 cup of apple juice, coconut water or any other juice you like
  6. Fruit, nuts or coconut to serve
Instructions
  1. 1. Place all of the ingredients {besides fruit, nuts and coconut to serve} in a large mixing bowl.
  2. 2. Mix until well combined. The mix will be a little sloppy but will thicken overnight.
  3. 3. Divide the mix evenly over 5 jars, screw on the lids and place in the refrigerator.
  4. 4. To serve, top with your favourite muesli toppings. I did crushed strawberries and kiwi, and banana and coconut here.
